Spanish Omelette


Ingredients:
·        4 potatoes (1/2 kg.)
·        6 medium eggs
·        1 whole onion
·        Olive oil
·        Salt



How to make it:
1.      Peel the potatoes and chop them. Peel the onions and cut them into strips.
2.      Put enough olive oil to cover the potatoes in a pan.
3.      When the oil is hot, fry the potatoes until they are golden brown and a little crispy (about 10 minutes). Then add the onion.
4.      When the potatoes are golden, drain well with a strainer.
5.      Beat the eggs in a bowl.
6.      Add the fried potatoes, onion and half a teaspoon of salt.
7.      Then put a pan with 3 tablespoons of oil over medium heat and toss the mixture of eggs, potatoes and onions.
8.      Now let it curdle half a minute without stirring. Lower the heat and leave for a few minutes to continue curdling. Next turn the tables when the edges are made and let another minute to finish the other side curdle.
